This one is a big deal in my house. Not only am I intolerant of the potato-grain combo, my husband is flat out potato intolerant. Super tough for a meat-and-potatoes guy. My answer? Rutabagas. Yeah. I know, they’re kind of ugly. Freshly peeled, they can be pretty pungent. But cook them with other ingredients, and they mellow out.
I know, you’re wondering why not turnips? It’s a great question. I haven’t tried turnips yet because, frankly, I’m a tad lazy. I’d rather peel and cut two rutabagas than eight turnips.
So far on this 21 Day Sugar Detox, I’ve made two dishes using rutabagas in place of potatoes. I made hash browns, and the rutabagas picked up the flavors of the ingredients and it was really, really good. Big thumbs up from my husband. In chicken soup they had the texture of Yukon Golds. I didn’t try to trick my husband; he knew ahead of time but said he couldn’t tell the difference. What???
It’s also my understanding that you can use them in place of mashed potatoes, which I am all about, because I can’t seem to get a groove with mashed cauliflower. Oof. I haven’t tried yet, so let me know if you decide to mash them, or if you already do. I’ll post the recipe for hash browns in a day or two.
